Zucchini Fritters with Chipotle-Lime Crema
These zucchini fritters are crisp on the outside and tender in the center. Serve this summer side dish or appetizer with chipotle-lime crema for dipping.

For the zucchini fritters: Using a spiralizer or the large holes of a box grater, spiralize or grate the zucchini. (If your spirals end up being super long, roughly chop them into 2- to 3-inch long pieces.) Toss with salt and set in a colander for ⏱️ 10 minutes. Press with paper towels to remove as much water as possible.

For the chipotle-lime crema: In a small bowl, whisk together the sour cream, mayonnaise, hot sauce, chili powder, cumin, salt, and lime juice.

In a medium bowl, whisk together the eggs and green onion. Gently fold in the zucchini, then the flour and cornstarch, just until combined (do not over mix).

In a large cast iron skillet, heat 1/4-inch of vegetable oil over medium-high heat. Drop a teaspoon of batter into the pan. If it sizzles, the oil is ready. (Temperature should read about 325°F on a thermometer.)

Using a spring-handled cookie scoop or a measuring cup, drop about 1/4-cup of batter into the hot oil, leaving some space in between each fritter. Flatten the fritters with the back of a measuring cup or spoon until they are no more than 1/2-inch thick. Cook until golden brown, 3 to ⏱️ 4 minutes, then flip and cook the other side about 3 more minutes. (Adjust the heat of the stove as needed, if the fritters are getting too dark.) Transfer to a cooling rack or paper towel-lined plate. Repeat with the remaining batter. Serve hot with the crema.
