Melt the butter in a large saucepan over medium heat, add the onions and cook until tender, about ⏱️ 5-7 minutes.

Add the garlic and thyme, mix, and cook until fragrant, about ⏱️ 30 seconds.

Add the broth, zucchini, and potato, bring to a boil, reduce the heat and simmer, covered, until tender, about ⏱️ 15 minutes.

Puree with a stick blender, in a blender, or in a food processor, to the desired consistency.

Add nutmeg, cream, and cheese and let the cheese melt, about ⏱️ 2-3 minutes.
