Warm the olive oil in a frying pan over medium–low heat. Add the shallots, garlic and a pinch of salt. Cook for 15–⏱️ 20 minutes, stirring occasionally, until soft, sticky and golden. Remove with a slotted spoon and set aside on kitchen paper.

Meanwhile, cook the edamame in boiling water for 3–⏱️ 4 minutes, until just tender. Drain and refresh in cold water, reserving a cupful of cooking water.

Add the edamame, butter beans, jalapeños, tahini, most of the chives, and a pinch of salt to a high-speed blender. Pour in 150–200ml of the reserved cooking water and blend until smooth.

Spoon into a serving bowl and top with the crispy shallots and garlic. Finely chop the remaining chives and extra jalapeños, and scatter over the top. Drizzle with olive oil, chilli flakes (if using) and flaky sea salt. Serve with crudités, seeded crackers or toast.
