Beat confectioners’ sugar, vanilla, and 1 cup cream with an electric mixer on medium-high speed until soft peaks form, 1 to ⏱️ 2 minutes.

Line a 9- by 5-inch loaf pan with plastic wrap, leaving a 4-inch overhang on all sides. Spread 1/2 cup whipped cream on bottom of prepared pan, and top with 4 ice-cream sandwiches. Repeat two more times, ending with a layer of whipped cream. Freeze at least ⏱️ 8 hours and up to 2 days.

Melt chocolate chips, cinnamon, and remaining 5 tablespoons cream in a microwave-safe bowl on HIGH, stopping to stir halfway through, just until melted and smooth, ⏱️ 45 seconds to ⏱️ 1 minute. Cool slightly.

Remove ice-cream cake from freezer and lift onto serving plate; discard plastic. Drizzle chocolate sauce over top. Slice with a serrated knife.
