Preheat the oven to 350°F. Drain the black-eyed peas and add them to a bowl. Partially mash the peas, leaving some whole. Add all other ingredients, reserving half the cheese. Taste and adjust seasonings.

Spread the mixture into a 1 1/2 quart baking dish, top with the remaining cheese, and bake for ⏱️ 25 minutes until hot and bubbly. (Place some jalapeno slices on top before baking if you like.) Broil for a couple of minutes if you like brown edges. Serve with tortilla chips!
