📝 Preparation Steps
1
Thai Fried Eggs
2
Place eggs in a bowl of warm temperature for ⏱️ 10 minutes while you prep.
3
Crack eggs in a small bowl.
4
Turn heat on medium high heat. When pan is hot, add oil. I suggest 1 tablespoon oil per egg. Gently add eggs in the pan, slowly and as close to the pan as possible to avoid splatter.
5
Let the egg fry for ⏱️ 30 seconds to ⏱️ 1 minute until the edges turn golden and crispy! Tip: Gently swirl the pan so the oil can crisp all areas of the egg.
6
Serve fried eggs with the Yam Kai Dao sauce for a super flavorful bite and hot rice!
7
Yam Khai Dao Sauce (optional)
8
To make the sauce, juice one lime and add in a bowl. Thinly slice garlic, shallot, scallion and thai chili. You can add red bell pepper for non-spicy version like me.

Next, mix together lime juice, fish sauce, water and sugar until the sugar has dissolved. Now gently mix the garlic, shallot, scallion and thai chili in the sauce.
