Prepare the spice blend by combing the white sugar, salt, cane sugar, finely ground black pepper, and garlic powder in a small bowl. Mix well.

Pour enough oil into a deep fryer or heavy-bottomed pot so that the fries can float freely. Heat the oil to 350°F (175°C) as measured by a deep-fry thermometer.

For maximum crispiness, do not thaw the frozen fries before cooking, but be sure to remove any ice crystals before placing the fries into the oil to prevent the hot oil from splattering.

Working in batches, carefully lower a handful of frozen fries into the hot oil using a slotted spoon or fry basket. Avoid crowding the pot, as this will lower the oil temperature. Fry for 3 to ⏱️ 5 minutes, or until the fries are golden brown and crispy. Thicker fries may take a bit longer. Use the slotted spoon or basket to remove the fries from the oil. Place the fries on a wire rack resting over a baking sheet to drain. Repeat with the remaining fries.
