Begin by cooking the rice according to packet instructions. Once cooked, drain and wash under cold water; set aside in the fridge.

Blanch the peas, courgette and mange tout in boiling water for ⏱️ 30 seconds before running under cool water.

Once the rice is cool, mix it together with the peas, courgette, mange tout and pine nuts in a large bowl.

Stir through a good drizzle of olive oil, lemon juice, chilli flakes, chopped mint, salt and pepper.
