Line a large baking tray with parchment and spread the popcorn across it.

Melt the white chocolate in a microwave safe bowl at 50% power, for about 1½-⏱️ 2 minutes, stopping and stirring every ⏱️ 20-30 seconds, just until it is smooth. Stir in the peppermint extract, taking care not to add too much.

Drizzle the popcorn with with about ⅔ of the melted chocolate and sprinkle with some of the crushed candy canes, stir gently.

Spread again across the parchment, and drizzle with the remaining melted white chocolate and sprinkle with remaining candy cane bits if desired.
