Preheat oven to 350°F. Combine the butter and sugars and beat with an electric mixer until fluffy. Add the egg and vanilla and beat until smooth.

Add the flour, cornstarch, baking soda, and salt. Beat to combine. Add the white chocolate chips and crushed candy and beat again to mix throughout.

Scoop 2 tablespoons worth of dough (12 per baking sheet) onto a parchment-lined baking sheet and roll into balls with your hands.

Bake for ⏱️ 8-9 minutes JUST until the edges have very lightly browned. The centers should still look soft with a few cracks on top. Allow the cookies to cool on the baking sheet for ⏱️ 4-5 minutes and then transfer to a wire rack to cool completely. (This cooling rack sees regular use in my kitchen.)

Store tightly covered on the counter for 2-3 days or freeze in an airtight container for several weeks.
