To a food processor, add the goat cheese and sour cream and process until light and fully incorporated, about ⏱️ 30 seconds. Set aside.

In a medium skillet, cook the pancetta over medium heat, stirring occasionally, until crisp and rendered down, about ⏱️ 10 minutes. Add the panko and parsley, and toast in the skillet, stirring occasionally, until the panko is golden brown, 3 to ⏱️ 4 minutes. Remove the skillet from the heat and set aside.
