Weeknight Miso Noodles with Greens
At Deliciously Ella, we always find comfort in a warm bowl of noodles that’s full of flavour but still feels refreshingly light. This dish does just that – a rich umami miso sauce, a hint of chilli and satisfyingly crisp greens. It comes together just in half an hour, making it the perfect easy weeknight bowl.

📝 Preparation Steps

In a small bowl or jug, whisk together all the sauce ingredients and 120ml (½ cup) water until smooth. Set aside.

Warm a generous drizzle of oil in large frying pan or wok over high heat. Add the mushrooms and cook for 8—⏱️ 10 minutes, stirring often, until golden. Remove to a plate and set aside.

Meanwhile, cook the noodles in salted boiling water according to packet instructions. Drain and refresh until cold water to stop them sticking together.

Return the pan to medium—high heat. Drizzle in a little more oil if needed, then add the cavolo nero and broccoli. Cook for 3—⏱️ 4 minutes, stirring often, until just tender and lightly charred. Add the garlic, ginger and chilli, and cook for another 2—⏱️ 3 minutes until fragrant.

Reduce the heat to low, pour in the sauce, then add the mushrooms, noodles and toasted seeds (if using) to the pan. Toss together until glossy and everything is warmed through. To serve, divide between bowls and top with a spoonful of crispy chilli oi (if using).
