Place the cubed watermelon, simple syrup, and lime juice in a food processor or blender and blend for about ⏱️ 2-3 minutes or until the mixture forms a thick liquid.

Pour the juice through a fine mesh sieve to strain out the seeds and any large pulp. Use a spoon to stir up the pulp and push out all the liquid.
