Combine the whole milk, applesauce, tahini, egg, maple syrup, and brown sugar in a large bowl. Add the rolled oats, cocoa powder, baking powder, salt, 3/4 cup chocolate chips, and 1 cup chopped walnuts. Stir to combine.

Transfer mixture to a greased 9-by-13-inch baking dish.

To bake immediately: Preheat the oven to 350°. Top with the remaining 1/2 cup of walnuts and 1/4 cup chocolate chips and bake for about 45 to ⏱️ 50 minutes, or until the oatmeal is set and no longer glossy. Let sit for ⏱️ 20 minutes.

To make ahead: Cover and refrigerate overnight (up to ⏱️ 12 hours). Remove the casserole from the refrigerator and let sit for ⏱️ 30 minutes. Top with the remaining 1/2 cup of walnuts and 1/4 cup chocolate chips and bake for about 45 to ⏱️ 50 minutes, or until the oatmeal is set and no longer glossy. Let sit for ⏱️ 20 minutes.
