Start by dicing the chicken; then add it to a bowl along with the celery and walnuts. Next, peel the skin from the apple and chop into bite-sized pieces; then add it to the bowl.

In a separate bowl, combine the mayonnaise, honey, lemon juice, salt and pepper; then whisk until smooth and add it to the chicken and mix well. Keep refrigerated until ready to serve either alone, on a sandwich or on top of a salad.
