Very Veggie Pasta
This speedy protein-packed pasta dish comes together in just under 20 minutes. A simple, yet nutritious dish, the cannellini beans add protein and fibre; plus the sprinkle of nutritional yeast gives an extra dose of vitamin B12 and a delicious cheesy flavour.

Bring a pot of salted water to the boil. Add the kale and quickly blanch. Remove and place in a blender with the cashew cream.

Add the pasta to the pot of water and cook according to packet instructions. When almost cooked, remove a small ladle of cooking water and add the cauliflower and broccoli to the pot. Add the reserved pasta water to the blender with the kale, cashew cream and a handful of fresh basil. Blitz until smooth and creamy.

When the pasta and vegetables are cooked, drain and return to the pot. Add the kale pesto and cannellini beans and cook for a further minute over low heat to warm through, stirring continuously. Season with nutritional yeast, sea salt and black pepper; serve immediately.
