Vertical Raspberry Napoleon
You can use any fresh fruit in these festive individual desserts; strawberries and blueberries are favorites.

In the bowl of a food processor fitted with chopping blade, puree 1/2 cup raspberries with granulated sugar. Transfer puree to a fine sieve and set over a bowl. Using the back of a spoon, press down on puree; discard the pulp and seeds. Set 6 raspberries aside.

In a medium bowl, combine remaining raspberries and blackberries. Cover and refrigerate.

Heat oven to 400 degrees F. Place phyllo between 2 sheets of waxed paper, then cover with damp towel. (Phyllo pastry dries out very quickly; each time you remove a sheet, be sure to cover the remaining sheets.)

Lightly brush a large baking sheet with butter. Working quickly, place 1 phyllo sheet on baking sheet; brush with butter and sprinkle evenly with 1 tablespoon confectioners' sugar. Repeat process with 11 phyllo sheets, stacking one on top of another. Place remaining phyllo sheet on top and brush with butter.

Place another baking sheet on top of the prepared phyllo sheets. Weight sheets down with heavy-duty ovenproof pan. Place in oven and bake until golden brown -- 35 to ⏱️ 40 minutes. Remove weight and let pastry cool ⏱️ 10 minutes.

Trim 1/2 inch from each side of pastry; cut pastry in half, making two 5 1/2- by 8-inch rectangles. Cut each rectangle into 6 triangles.

Meanwhile, beat heavy cream in a large bowl with electric mixer on high speed until stiff peaks form. Fold chilled raspberry purée into whipped cream.

Alternately layer chilled berries and whipped cream in 6 serving glasses. Top each with two slices of pastry and garnish with a raspberry.
