Veggie-Packed Lasagne
This hearty, nourishing bake is crammed full of juicy vegetables, layered with pasta and our incredible ‘I can’t believe it’s not cheese’ cashew and tofu ricotta. Any leftovers will keep well in the fridge for up to 3 days.

Add the cashews to a bowl and cover with freshly boiled water. Set aside to soak.

Place a large, heavy-bottomed saucepan over medium–high heat. Add a drizzle of olive oil, followed by the minced garlic and chilli flakes. Cook for 1–⏱️ 2 minutes, stirring constantly until fragrant but not coloured. Add the tin of chopped tomatoes and a sprinkle of salt and pepper; cook, stirring occasionally, for 8–⏱️ 10 minutes until darkened and reduced.

Add the chopped peppers, tomatoes, mushrooms, aubergine and sliced basil, reserving several leaves of basil for garnish. Cover with a lid and cook for 25–⏱️ 30 minutes, uncovering occasionally to stir until all of the vegetables are tender and reduced.

While the sauce is simmering, make the tofu ‘ricotta’. Drain the cashews and place into the bowl of a food processor with all of the other ‘ricotta’ ingredients. Blitz until smooth and creamy — it should take about 3–⏱️ 4 minutes. Adjust the seasoning to taste.

Preheat oven to 190°C / 170°C fan / 375°F.

In an ovenproof dish (26 x 18 x 5cm / 10 x 7 x 2″), assemble the lasagne by layering the tomato sauce, then the ‘ricotta’ and follow with a single layer of lasagne sheets. Repeat to create 4 layers and everything is used up, finishing with a final, thin layer of the tomato sauce (the tofu ‘ricotta’ is quite thick so don’t worry if it doesn’t easily spread — simply place small spoonfuls as evenly as possible over the tomato sauce and it will melt during baking). Sprinkle with nutritional yeast. Place into the preheated oven and bake for ⏱️ 45 minutes. Remove and allow to cool for 5–⏱️ 10 minutes before serving. Serve sprinkled with fresh basil and red chilli flakes, if desired.
