Pre-heat a stockpot over medium-high heat. Add the olive oil and sauté the onion, fennel and carrots until they start to soften – about 6 to ⏱️ 8 minutes.

Add the garlic, oregano and tomato paste and cook for another ⏱️ 2 minutes. Toss in the bay leaves and season with salt and freshly ground black pepper. Add the farro and stir well to coat.

Add the tomatoes and vegetable stock and bring to a boil. Reduce the heat to a simmer, cover with a lid and simmer until the farro is tender – about 25 to ⏱️ 30 minutes.

Add the beans and greens and simmer for another ⏱️ 5 minutes or until the greens have wilted. Stir in the fresh parsley and season again to taste with salt and freshly ground black pepper.

Serve in bowls with shaved Parmesan cheese on top and sprinkle with a little fresh dill if using.
