Turmeric Cauliflower & Sweet Potato Traybake
This traybake is so vibrant — the turmeric gives it a sunny glow, while the cinnamon, parsley and lime add great flavour. We mix coconut yoghurt through the roasted veg to make it irresistibly creamy and serve it with a dollop of hummus and an extra squeeze of lime juice.

Preheat oven to 190°C fan / 375°F. Place the drained chickpeas and sweet potato chunks on a large baking tray and drizzle with olive oil, turmeric, cinnamon and a sprinkling of salt. Mix well and cook for ⏱️ 20 minutes.

After ⏱️ 20 minutes, remove the tray from the oven and mix in the red pepper and cauliflower. Return to the oven and cook for a further 15–⏱️ 20 minutes until the sweet potato and cauliflower soften.

When cooked, remove from the oven and mix through the yoghurt, lime juice and a handful of chopped parsley.
