Turmeric & Lentil Soup
This turmeric and lentil soup is just amazing, it’s the most comforting soup. The lentils, carrots and almond milk together make it thick and creamy, while the turmeric, garlic, mustard seeds and cumin give it such a deep, rich flavour so every spoonful really bursts with goodness. We love serving it topped with roasted herby cashews, as these make it even more flavoursome, plus they add texture to the smooth soup with a nice added crunch.

Preheat oven to 180°C / 160°C fan / 350°F.

Peel the carrots and chop them into slices, place the slices on a baking tray with the chopped garlic, some olive oil, salt, pepper and the mixed herbs.

Place the tray in the oven and allow the carrots to cook for about ⏱️ 25 minutes, until they’re nice and soft.

While the carrots cook, make the lentils. Simply place them in a saucepan with the boiling water and a pinch of salt and simmer for about ⏱️ 10-15 minutes until they are totally soft. Set aside.

Place the cashews onto a baking tray with the olive oil and dried herbs, mix well to ensure everything gets coated. Cook in the oven for ⏱️ 10 minutes until golden.

Just before the carrots and lentils finish cooking; place the olive oil in a frying pan with the turmeric, cumin and mustard seeds and let them cook until the mustard seeds start popping.

Place the cooked carrots and garlic in a blender with the lentils and the fried herbs. Add the almond milk and water and blend until smooth and creamy.

Place the blended soup in a pan over a medium heat.

Pour the soup into bowls and top with the roasted cashews.
