Several hours or day ahead, prepare turkey filling: In 4-quart saucepan, heat oil over medium heat. Add onion and sauté until soft -- about ⏱️ 3 minutes. Add garlic, sauté ⏱️ 1 minute. Add turkey, salsa, cornmeal, and cumin, cook 8 to ⏱️ 12 minutes or until turkey is cooked through and no liquid remains. Transfer to container and cool. Cover and refrigerate until ready to assemble appetizers.

Just before serving, reheat turkey mixture in microwave oven or transfer to skillet and heat over low heat.

Place a lettuce piece on each cracker and top with 1 tablespoon turkey filling. Sprinkle each with 1/2 teaspoon of cheese and top with a tomato strip and cilantro leaf. Garnish plate with cilantro sprigs, if desired, and serve.
