For the filling, heat 2 tbsp EVOO and 2 tbsp butter in a large, deep skillet over medium-high heat. Add the ground turkey and crumble as it cooks until browned.

Season the turkey with Worcestershire sauce, salt, and pepper. Add 2 chopped celery ribs, carrot, 1 chopped onion, potato, and fresh thyme. Partially cover and cook for ⏱️ 8-10 minutes until vegetables are soft.

Sprinkle flour over the mixture, stir, and cook for ⏱️ 1 minute. Slowly pour in 2 to 2 1/2 cups of stock, stirring until it thickens into a gravy. Stir in the frozen peas. Transfer this filling to a casserole dish.

For the stuffing, melt the remaining 6 tbsp of butter in the skillet over medium heat. Add the remaining chopped celery, apples, bay leaf, and the other chopped onion. Sauté for ⏱️ 12-15 minutes until tender.

Sprinkle in the poultry seasoning (and salt/pepper if needed) and cook for ⏱️ 1 minute. Add the stuffing mix to the skillet.

Gradually add about 3 cups of stock, tossing gently until the stuffing is evenly moistened but not soaked. Remove and discard the bay leaf.

Spoon the stuffing mixture evenly over the turkey filling in the casserole dish. Dot the top with a few small pieces of butter.

Preheat oven to 375°F. Bake for ⏱️ 15-20 minutes, or until the filling is bubbly and the stuffing is golden and crisp on top. Serve warm.
