Preheat the oven to 325°F.

Spread the walnuts on a baking sheet and roast until fragrant and lightly golden, 7 to ⏱️ 9 minutes. Let cool, then coarsely chop.

In a large bowl, stir together the mayonnaise, yogurt, dijon mustard, vinegar, brown sugar, salt, pepper, and hot sauce, if using. Add the turkey, dried cranberries, parsley, celery, apple, onion, and walnuts. Toss well to combine.
