Melt the butter in a large saucepan, add the onion, carrots, celery and mushrooms and cook until tender, about ⏱️ 7-10 minutes.

Add the garlic, rosemary and thyme and cook until fragrant, about a minute.

Sprinkle in the flour and cook, while mixing, for ⏱️ 2 minutes.

Add the stock, turkey, wild rice and poultry seasoning, bring to a boil, reduce the heat and simmer, covered, until the rice is cooked, about ⏱️ 40 minutes. *
