Combine tuna, scallion, cracker crumbs, eggs, mayonnaise, and Old Bay in a bowl. (Mixture should be moist but not sopping. Add an extra crumbled cracker or two if it's too wet.) Divide into 8 patties.

Heat oil in a large skillet over medium heat. Place flour in a shallow bowl. Coat both sides of each patty in flour. Fry, in batches, turning once, until golden brown and warmed through, 4 to ⏱️ 6 minutes. Transfer to a wire rack to drain.

Serve atop green salad, garnished with parsley with lemon wedges alongside.
