Preheat oven to 450ΒΊF. Toss together bread, oil, and cayenne pepper on a rimmed baking sheet. Season with salt and black pepper. Bake, tossing once, until golden brown and crunchy, 13 to β±οΈ 15 minutes. Cool to room temperature.

Meanwhile, place garlic and anchovies in a large bowl. Use a fork to mash the garlic and anchovies until a thick paste forms. Add the mayonnaise, lemon juice, Worcestershire, mustard, and Parmesan and stir to combine. Season with salt and pepper. Add the romaine and croutons and toss to combine. Top with tuna.
