Preheat oven to 350°F. Fill each apple with sugar, dividing evenly. Place in an 8- by 8-inch baking dish and add 1/2 cup water. Bake until softened and the skins are starting to wrinkle, ⏱️ 50 minutes to ⏱️ 1 hour.

Meanwhile, combine sherry, beer, and cider in a large pot or Dutch oven. Combine cloves, allspice, cinnamon, nutmeg, and ginger in a muslin bag, large tea ball, or coffee filter tied with baking twine to create a sachet. Add spice sachet to pot. Bring to a simmer over low heat. (Do not allow to boil.)

Whisk egg whites on medium speed with an electric mixer until stiff peaks form, 5 to ⏱️ 7 minutes. In a second bowl, whisk yolks until foamy, about ⏱️ 2 minutes. Pour yolks into whites and whisk until just combined, about ⏱️ 30 seconds. With the machine running very slowly, whisk in 1 to 2 cups of warm ale mixture. Once the egg mixture feels warm to the touch, add it to the pot with the remaining ale mixture. Add baked apples, including any liquid, and stir to combine. Serve warm, preferably right after caroling.
