Tomato Spiced Beans on Toast
We’ve given beans on toast a Deliciously Ella twist! It’s one of the ultimate comfort meals and we’ve levelled it up by adding warming spices, zingy chilli, pickled onion and creamy avocado. It’s packed with fibre, protein, iron and prebiotics, and perfect for a weekend brunch or speedy weeknight dinner.

In a small bowl, mix one-quarter of the onion with the chilli, lemon juice, maple syrup and a pinch of salt. Set aside to lightly pickle.

Warm the olive oil in a sauté pan, frying pan or shallow casserole dish over medium—low heat. Add the garlic and cook for 1—⏱️ 2 minutes until fragrant.

Add the remaining onion and cook for ⏱️ 10 minutes, stirring often, until softened.

Stir in the garam masala and tomato puree, then add the cherry tomatoes and cannellini beans, along with the stock from the jar. Simmer for 15—⏱️ 20 minutes until thickened and glossy. Remove the pan from the heat, stir in the yoghurt (if using) and season to taste.

To serve, drizzle olive oil on the toast, top with the beans, pickled onion and chilli, some avocado and a handful of coriander leaves.
