Brush or spray the pita wedges with oil on both sides and bake in a preheated 400F/200C oven until crispy and golden brown, about ⏱️ 3-5 minutes per side.

Spread the olive oil out on a large platter, sprinkle on the tomatoes followed by the feta, salt, pepper and oregano, green onions and lemon juice.
