Preheat the oven to 190C (375F), fan setting.

Place the puff pastry onto a baking tray. Spoon the pesto over the puff pastry and smooth over, leaving about a thumbs width rim around the outside.

Cover the pesto with the sun-blushed tomatoes and artichokes (without the oil), before folding the edges of the pastry round to form a crust.

Brush the edges with almond milk, before baking for ⏱️ 30 minutes.

Once the tart has finished baking, add the fresh basil leaves on top and crack some fresh black pepper over the top before serving.
