Tofu Scramble
This is a great option if you’re looking for a hearty savoury breakfast. The spring onions, turmeric, paprika and tamari give the dish lots of flavour and whilst it may sound a bit weird it really does taste delicious! I love it on toast with some sliced avocado or sautéed mushrooms.

Heat a drizzle of olive oil in a large pan over a medium heat.

Once warm, add the chopped onion, garlic and salt, cook for ⏱️ 5-10 minutes on a low heat until soft.

Once soft, add the sliced spring onions into the pan with the turmeric and smoky paprika - cook for another minute, stirring continuously, before adding the tamari.

Finally, use your hands to crumble in the tofu and stir through.

Cook the scramble for another ⏱️ 5 minutes until the tofu is hot, stirring every now and again.
