Spray a 1-quart oven safe baking dish with cooking spray.

In a large bowl add the eggs, coffee, and vanilla extract, whisk until smooth; then add the sugar and cinnamon and mix well.

Cut the Italian bread into bite sized cubes; then add it to the egg mixture. Mix together with a spoon until the bread is coated, place in the baking dish; then wrap tightly and refrigerate overnight.

When you're ready to cook, bring the casserole to room temperature for about ⏱️ 15 minutes while you're preheating the oven to 350 degrees F.

Cook for approximately ⏱️ 20 minutes until the egg is cooked through; then remove from the oven, garnish as desired and serve hot with warm maple syrup.
