Preheat the oven to 450°F.

Sift the flour, baking powder, baking soda, and salt into the bowl of a food processor. Add 1/2 cup of the cold diced butter and pulse just until the butter is the size of peas. Pour in the buttermilk and pulse just until the dough starts to come together.

Dust a work surface with flour and turn the dough onto it. Press the dough together, pat it out into a disk about 1/2 inch thick, and then give it about 5 folds. Press it out again into a 1/2-inch-thick disk. Using a 3-inch round biscuit cutter or an empty tin can, cut out as many biscuits as you can. Press the scraps together gently and cut out as many more biscuits as you can. Arrange the biscuits on a baking sheet, spaced slightly apart.

Bake until golden brown, 10–⏱️ 13 minutes; do not over-bake. Brush the biscuits with the melted butter and enjoy!
