This Copycat Cinnamon Bread Will Transport You Straight to Dollywood
This pillowy, cinnamon and sugar-coated loaf is our version of the fan-favorite Cinnamon Bread at Dollywood. Serve warm and drizzled with glaze.

Make the dough: Combine yeast, water, and pinch sugar in a bowl. Let stand until foamy, 5 to ⏱️ 8 minutes (if it doesn’t foam, discard and start again).

Combine flour, salt, and 1 tablespoon granulated sugar in the bowl of a stand mixer. Add yeast mixture and melted butter. Knead with the dough hook on medium-low speed until a smooth dough forms, 5 to ⏱️ 8 minutes. Lightly butter a second bowl. Transfer dough to prepared bowl and loosely cover with plastic wrap. Let rise in a warm place until doubled in size, about ⏱️ 1 hour.

Lightly butter two 8-by-4-inch loaf pans and line with parchment paper, leaving a 2-inches of overhang on the long sides. Butter parchment.

Make the topping: Stir together granulated sugar, brown sugar, and cinnamon in a bowl. Sprinkle 2 tablespoons cinnamon-sugar on bottom and sides of prepared pans. Reserve remaining cinnamon-sugar.

Make the loaves: Punch down the dough and transfer to a lightly floured surface. Cut dough in half and shape each into a 6-by-3-inch rectangle. Place loaves in the prepared pans. Let rise in a warm place almost doubled in size, ⏱️ 30 minutes to ⏱️ 1 hour.

Preheat oven to 350°F. Cut four score marks into the top of each loaf with a sharp paring knife. (Loaves will deflate slightly.) Lightly brush melted butter over each loaf and sprinkle generously with remaining cinnamon-sugar, dividing evenly. Drizzle remaining melted butter over each loaf, dividing evenly.

Bake until loaves are golden brown, 25 to ⏱️ 28 minutes. Cool in the pans for ⏱️ 15 minutes, then use parchment paper to lift loaves from pans and transfer to a cooling rack.

Make the glaze: Whisk together confectioners’ sugar, vanilla, and water in a bowl. Drizzle glaze over warm loaves, dividing evenly, or serve on the side for dipping.
