Combine sour cream, mayonnaise, dill, and garlic in a bowl. Season with salt and pepper. Fit a rimmed baking sheet with a cooling rack.

Heat oil in a large skillet over medium-high heat. Place flour in a shallow bowl; season with salt and pepper. Place eggs in a second shallow bowl; season with salt and pepper. Combine Parmesan and panko in a third shallow bowl. Dip squash in flour, then egg mixture (allowing excess to drip off), then in breadcrumb mixture, pressing to help adhere. Fry in batches, turning once, until brown and crispy, 2 to ⏱️ 3 minutes; transfer to prepared baking sheet. Serve immediately with dipping sauce alongside.
