The Ultimate Chilli
This is our ultimate chilli – packed with smoky, spicy, warming flavours and full of fibre, thanks to all the different veggies. The key is giving each step enough time to cook so the flavours can really develop. It’s delicious with a crunchy cabbage slaw – we’ve included a recipe if you’d like to make it.

Warm the oil in a shallow casserole dish set over medium heat. Add the garlic and cook for ⏱️ 1 minute, until fragrant. Add the onion with a pinch of salt and cook for 15–⏱️ 20 minutes, until softened and golden.

Stir in the cumin seeds, smoked paprika, dried oregano, cayenne pepper, chilli flakes (is using) and tomato purée. Cook for ⏱️ 2 minutes, until fragrant.

Add the tinned tomatoes, beans, balsamic vinegar, maple syrup and dark chocolate. Place a lid on the pan and simmer over low heat for 30–⏱️ 35 minutes. Remove the lid and cook for a further ⏱️ 5 minutes, until slightly reduced, rich and glossy. Taste and adjust the seasoning as needed.

If making the slaw, whilst the chilli cooks, combine all the ingredients in a bowl. Toss together using your hands, working the lemon juice and salt into the vegetables. Set aside to soften slightly. For a creamier slaw, stir through a dollop of yoghurt before serving.

Divide the chilli between bowls and top with a generous spoonful of slaw (if using). Serve with steamed rice or quinoa, fresh coriander and a dollop of yoghurt.
