Prepare the Potatoes:

Start by cutting the potatoes in half or bite size if they are too large. Place the potatoes in a pot of cold water with a pinch of salt and bring to a boil. Cook until the potatoes are tender but not mushy. Drain and let them cool on a cookie sheet to prevent them from becoming soggy.

In a bowl, large enough to add the potatoes, mix olive oil, garlic, thyme, rosemary, parsley, salt, and pepper. Toss the cooled potatoes in the mixture.

In a bowl whisk together, Dijon mustard, egg, garlic, and very, very slowly add olive oil until smooth. When you have the consistency of mayonnaise, add Harissa if you want a spicy kick.
