The Best Nachos
Nachos are the perfect sharing plate to enjoy with friends or family, or ideal night in option. We love baking ours and topping them with smoky black beans, creamy cashew cream, juicy tomato salsa and chunky guacamole, all of the flavours taste amazing together.

📝 Preparation Steps

To make the cashew cream. Place the cashews in a bowl and cover with boiling water. Leave to one side to soak for at least ⏱️ 10 minutes or until they begin to feel soft.

Once the cashews feel soft, drain and place into a powerful food processor with the rest of the cashew cream ingredients. Blend the mixture until smooth, adding a dash more almond milk if needed until the mixture comes together to form a smooth cashew cream.

To make the tomato salsa. Simply place the chopped tomatoes, diced red onion and chopped coriander into a bowl. Squeeze in the lime juice, add a drizzle of olive oil and a sprinkling of salt. Mix well until all of the tomatoes are coated in olive oil and lime juice. Once the mixture has come together, cover and leave in the fridge until ready to use.

To make the guacamole. Simply scoop the avocado flesh out of their skins, removing the stones. Place in a large bowl and mash using a fork or masher to create a chunky mixture. Mix through the coriander, lime juice, chopped red onion and a sprinkling of salt. Once the mixture has come together, cover and leave in the fridge until ready to use.

To make the black beans. Place a pan over a medium heat and add a drizzle of olive oil. Once warm, add the onion, garlic and a pinch of salt. Cook for ⏱️ 5-10 minutes until soft.

Add the smoked paprika and cook for a minute, before adding the almond butter, tomato puree, drained black beans, lime juice and chopped tomatoes.

Bring to the boil, before reducing the temperature and leaving to simmer for ⏱️ 10-15 minutes until everything is piping hot and cooked through.

For the nachos. Preheat the oven to 180C, fan setting.

Place the corn chips into an ovenproof bowl and cook in the oven for ⏱️ 5 minutes, or until warmed through.

Once cooked, top with the black beans, tomato salsa, guacamole and cashew cream, serving any extra in bowls on the side. Sprinkle over some extra coriander before serving.
