Heat oil in a medium saucepan over medium heat. Add onion and garlic. Cook, stirring occasionally, until tender, 4 to ⏱️ 6 minutes. Add stock and season with salt; bring to a boil. Add rice and reduce heat to low. Cover and cook just until rice is tender, 15 to ⏱️ 17 minutes.
