The Best Christmas Cake
There’s nothing quite like a homemade Christmas cake and this one is so good it’s hard to believe it’s plant-based. This rich flavour-packed sticky bake is loaded with toasted flaked almonds, brandy and juicy dried fruit.

Place the dried fruit, orange zest and juice and 125ml / 4 fl oz brandy into a saucepan. Heat over medium heat until most of the liquid has been absorbed. Stir in the sugar and tip into a large bowl to cool.

Preheat oven to 150°C / 130°C fan / 300°F. Line a 23cm / 9″ round (7cm / 2½” deep) cake tin with baking parchment on the bottom and around the sides.

Once the fruit mixture has cooled, add the bicarbonate of soda, flour, cinnamon, mixed spice, toasted flaked almonds and olive oil, along with a pinch of sea salt. Tip the cake mixture into the prepared tin and level with the back of a spoon.

Bake for ⏱️ 2 hours ⏱️ 30 minutes until a skewer inserted comes out clean. While the cake is still warm, poke holes with a cocktail stick and pour over 25ml / 1½ tablespoons of brandy to absorb into the cake. Leave in the tin to cool completely.
