Heat a large skillet over medium-high heat. Add 2 tablespoons vegetable oil, 2 thinly sliced shallots, 7 cloves sliced garlic, 1 tablespoon fresh minced ginger, and ½ thinly sliced red bell pepper. Stir-fry for ⏱️ 3 minutes.

Push the veggies off to the side. Turn the heat to high and add 1 pound lean ground beef. Cook until no longer pink, about ⏱️ 7-8 minutes.

In a small bowl, whisk together 2 teaspoons brown sugar, 2 tablespoons fish sauce, 6 tablespoons low-sodium soy sauce, 3 teaspoons oyster sauce, 2 tablespoons Asian garlic chili paste, ½ cup low sodium beef broth, ¼ cup water, and 1 teaspoon cornstarch.
