Preheat the oven to 400˚. Heat the vegetable oil in a 12-inch cast-iron skillet over medium-high heat. Add the beef and chorizo and cook, breaking up the meat with a wooden spoon, until browned and cooked through, 4 to ⏱️ 6 minutes. Season with the salt and pepper.

Add the onion and bell pepper to the skillet and cook until the vegetables start to soften, about ⏱️ 3 minutes. Add the garlic and cook ⏱️ 1 minute. Add the tomatoes, beans and adobo sauce and stir to combine. Reduce the heat to low and let simmer.

Prepare the corn muffin batter according to the package directions. Stir in 2 cups of the cheese.

Remove the skillet from the heat and dollop the corn muffin batter over the meat mixture. Spread evenly, leaving a 1/2-inch border around the edges of the pan so it doesn't spill over in the oven. Sprinkle with the remaining cheese.

Place the skillet on a baking sheet and bake until the topping is golden brown and cooked through, and the cheese is melted and bubbly, 15 to ⏱️ 20 minutes. Let sit for a few minutes before serving.
