Tahini Slices
These tahini slices were an instant hit when we made them. They've got a delicious peanut base with a fudgy, gooey middle and a rich chocolate topping. Be sure to serve them straight from the fridge, as they'll go a little soft over time.

Line a 29 x 18 cm tin with baking parchment.

To make the base, place the almonds, dates, peanut butter and salt into a food processor and pulse until the mixture sticks together – you may need to press it together using your hands.

Place the mixture into the prepared tin and press down until compact, ensuring the mixture is even. Place into the freezer while you make the filling.

For the filling, place the coconut oil, dates and tahini into a small pan over a low heat and cook until the coconut oil has melted. Once melted, place into a food processor and blend until smooth.

Pour the filling over the base, smoothing over with a spoon until even. Place the tin back into the freezer and leave for ⏱️ 1 hour until set.

For the chocolate topping, place the coconut oil into a small pan over a low heat and cook until melted. Once melted, add the cacao powder and maple syrup and mix to combine.

Once the filling has set, pour over the chocolate topping and place into the fridge for at least ⏱️ 2 hours or until ready to serve.
