This creamy dressing almost came about by accident and it turned out to be so good, it’s been our go-to dressing ever since — find it drizzled over our Jenifer Aniston salad, the roasted roots salad and aubergine BLT salad. It’s easily doubled and keeps well in the fridge for up to two weeks.

Place the tahini, lemon juice, mustard and maple syrup into a bowl and whisk to combine. Add the water and whisk again to loosen the dressing. Add salt to taste.
