Place the rice and water in a medium saucepan, bring to a boil, reduce the heat and simmer, covered, for ⏱️ 18 minutes, before turning off the heat and letting it sit for ⏱️ 5 minutes.

Meanwhile, cook the beef and onion in a large skillet over medium-high heat, breaking it apart as it cooks, before draining off any excess grease.

Add the garlic and taco seasoning and cook until fragrant, about a minute.

Add the cornstarch mixed into the water, mix well, bring to a simmer and cook until most of the liquid has cooked off, about ⏱️ 3-5 minutes.
