Sweet Potato Wedges With Zingy Avocado Crème
The first ever recipe that Ella wrote was roasted sweet potatoes, 10 years later it’s still a firm favourite. Serve with a creamy zingy avocado dip, they’re even more irresistible than ever before.

Heat oven to 200C / 180C fan / gas 7.

Put the sweet potato onto a baking tray and pour over the olive oil, sprinkle on the cumin, paprika, a big pinch of flaky sea salt and crack of black pepper and mix to coat the potato. Roast for ⏱️ 40 - 45 mins, tossing halfway through until soft and golden.

Meanwhile make the dressing by putting all the ingredients into a high-speed blender and blitz until you have a smooth creamy dressing, adding a splash more oat milk or olive oil if needed. Serve in a bowl alongside the crispy spiced sweet potato wedges to dunk into.
