Melt the butter in a large saucepan over medium heat, add the onion and cook until tender, about ⏱️ 5-7 minutes.

Add the garlic, thyme, sage, paprika, and flour, mix and cook until fragrant, about a minute.

Add the milk, sour cream, and nutmeg, bring to a simmer and cook until the sauce thickens, about ⏱️ 2-3 minutes.

Add the cheese and cook until it melts, about a minute, before removing from heat and seasoning with salt and pepper to taste.

Spread a few tablespoons of the sauce over the bottom of a 9×13 inch baking pan, layer the sweet potatoes in the pan alternating with sauce until all of the potatoes and sauce are in the pan.

Sprinkle on the cheese and bake in a preheated 350F/180C oven until the potatoes are tender, about ⏱️ 45-60 minutes, before letting it rest for ⏱️ 20 minutes and enjoying!
