Sweet Potato & Sun-Dried Tomato Salad
This is the perfect salad to make for lunch or dinner when you're looking for something simple and fresh. The roasted sweet potatoes taste delicious with the chopped sun-dried tomatoes and the creamy lime and coconut yoghurt dressing. We love to enjoy this on its own or with a side of creamy hummus.

Preheat the oven to 180C (350F), fan setting.

Place the sweet potatoes onto a baking tray and drizzle with olive oil and a pinch of salt. Cook for ⏱️ 40 minutes until soft. Once cooked, remove from the oven and spoon into a large bowl.

Add the sun-dried tomatoes, sunflower seeds and mixed leaves into the bowl and mix well.

In a small bowl, mix together all of the dressing ingredients until a smooth dressing forms. Pour the dressing into the large bowl and mix well until everything is coated.

Spoon the salad into bowls and top with a crack of pepper and a pinch of chilli flakes (if using).
