Sweet Potato & Harissa Soup
I love adding sweet potato to my soups, it's the perfect vegetable to thicken everything up and make it really creamy and delicious. We like adding a swirl of harissa before serving, it creates a beautiful colour contrast.

📝 Preparation Steps

Place the sweet potato and parsnip into a pan of salted water over a medium heat and boil for ⏱️ 30-35 minutes until soft.

Once cooked, drain and leave to one side.

Put the onions and garlic into a pan over a medium heat and drizzle with a little olive oil - cook for ⏱️ 5-10 minutes until soft.

Add the sweet potato, parsnip and coconut milk and cook for ⏱️ 10-15 minutes until everything has softened.

Blitz everything together using a hand blender until smooth. Either stir through the harissa now, or add it as a dollop on top at the end.
